                  1、猪肘(蹄膀)、葱、姜、香叶。黄酒、盐、蘸酱料。

                  2、将猪蹄膀刮去猪毛洗净,放入沸水焯5分钟,洗去浮沫;

                  3、高压锅内加入清水、黄酒、葱段、姜片、香叶,将猪蹄膀放入锅中,旺火烧沸上气后用小火焖烧30分钟左右关火;

                  4、自然冷却排↑气后取出猪肘,剔去骨头,用盐和黄酒在猪蹄膀周身抹一遍;

                  5、将2个大保鲜袋套在一起,把猪肘放进保鲜袋里,卷成圆筒型,用⌒棉绳捆扎紧,放入冰箱冷藏。
